The Restaurant at the Rutland has undergone an exciting transformation into the Kyloe Restaurant & Grill, Edinburgh’s first gourmet steak restaurant.
In order to stand out amongst the increasing number of excellent dining venues in the city, and following a period of extensive market research, the new restaurant will specialise in providing a gourmet steak experience alongside its popular a la carte menu.
Susi Conchar, Head of Sales, Marketing & PR for Signature Pub Group, says: “Our aim is to build on the excellent reputation the restaurant has gained over the last three and a half years while specialising in providing diners with a gourmet steak experience as we feel there is a gap in the Edinburgh market for such a restaurant.”
The impressive new grill menu, designed by The Rutland’s award-winning head chef David Haetzman, showcases eight different cuts of pedigree Aberdeen Angus Steak available exclusively in Edinburgh for the first time. Diners will also be able to enjoy ‘The Kyloe Steak Board’ featuring a selection of unusual and interesting cuts, and a ‘Burger Slider’ which includes three variations of burger - venison and redcurrant, wild boar and apple, and Aberdeen Angus fillet.
The name Kyloe, an old Scots word for Highland cattle, was chosen for the new restaurant as it represents the strength and versatility of Scottish beef produce.
David Haetzman says: “Everyone loves a good steak so we are determined to give our diners the best steak experience possible. In our endeavours to become Edinburgh’s top steak restaurant we have spent considerable time searching for the best suppliers of beef and decided to use two main suppliers who we believe have fantastic products which will provide a great experience for the customer – Hardiesmill, based in Gordon in the Borders, and Hendersons, a small family
butcher in Kirkcaldy. As well as traditional cuts we have chosen some less familiar cuts for their texture and flavour.”
Instead of creating a wine list using just one supplier, the team has searched for unusual wines provided by several suppliers, including Bibendum, Wine Importers Edinburgh, and Liberty Wines, in order to create a unique and exciting wine list. The wine list includes Kyloe’s signature wine ‘Angus the Bull’, a South Australian Cabernet Sauvignon which is the ideal complement for steak.
Prior to reopening the restaurant will be undergoing significant renovations which will remain sensitive to the existing design. The new design includes comfortable booths and will have a more laid back and relaxed style often associated with steak restaurants.
Artwork by two Scottish artists Caroline Shotton and Georgina McMasters will adorn the walls and be available to buy.
The restaurant will be closed for refurbishment from Sunday 16 October until the afternoon of Friday 21 October. During this time guests can eat in The Rutland Bar, where the restaurant menu will still be available, however food will not be served on Monday 17 October due to kitchen renovations.
